Eating ground beef that appears gray can be safe, but understanding why it changes color is important

When you buy ground beef and find it looks gray, it can be unsettling. Fresh ground beef typically appears bright red due to oxymyoglobin reacting with oxygen. Gray patches in the middle of the meat usually indicate it hasn’t been exposed to oxygen yet, so it’s generally safe to eat. However, if the outer layers or a significant portion of the meat is gray or brown, it’s better to discard it to avoid any risks. As stated, “if the meat smells funky or off,” it’s a clear sign it’s gone bad and should be thrown away.

To ensure the meat you’re buying is fresh, always be mindful of its appearance and odor. These simple guidelines can help you determine whether your ground beef is safe to eat or should be discarded.
